Burke started at Mercyhurst in the fall of 2022 as a graduate assistant, coaching the defensive line, and in the summer of 2024 was elevated to Assistant Coach while continuing to oversee the defensive front for the Lakers.
In 2023, Burke helped Mercyhurst turn up the pressure on pass plays, allowing the Lakers to claim the seventh-fewest passing yards among any team in the PSAC. She once again helped White to another successful campaign with the defensive end being named the PSAC Second Team while interior defensive lineman, RJ Tillman, was recognized to his ability to affect both the run and pass games on his way to a First Team nod.
In 2022, Burke helped the Lakers be one of the more opportunistic fronts in the PSAC with the team forcing 11 fumbles on the year to be tied for the third-most in the conference. The team also managed to be one of the more disruptive units in the passgin games with team's throwing for only 1,911 passing yards, the second-fewest in the conference. Her work with defensive end Camden White proved to be fruitful as well as one of Mercyhurst's top defensive options finished with six sacks on the year, tied for the seventh most in the conference.
Prior to coming to Mercyhurst, Burke was a student manager from 2018-2022 for the defensive line at the University of Notre Dame, helping with day-to-day responsibilities for the Fighting Irish.
